
Jack and I just came back from Costco (danger) with a 4lb brisket, 4lbs pork loin, and 7 lbs of pork ribs. I gave Jack an electric smoker last October for his birthday. You can see where this is going. Since Jack has his spring break this week he is going to use the smoker and brew more beer. I forsee many miles on the treadmill in my near future.
So. . . what are your favorite rub recipes? How about wine or beer pairings?

We have a smoker that David gave us for Christmas a few years ago -- love it! We've made some incredible pork shoulders, ribs, and turkey breasts. Mmmmm. This is my all-time favorite of the rub recipes we've used.
Uncle Richard made some great ribs once by par-boiling them and then smoking them for a while.
It's an idea he got from a guy while we were waiting to check out at City Market.

We printed the recipe for the rub. Jack is very excited about it. He wants to go to the store now to get the ingredients. He is also intrigued by the par-boiling step. Hmmm. So much food and so little time.
That was awesome! Jack smoked a pork loin with the rub after letting it marinate for about 5 hours. He then sliced the meat and we put it on toasted ciabatta rolls with some leftover fried onions (Famous Dave's) and Jack Stack Barbecue sauce. WOW!
Mmmmm. That sounds so good!!! Give me some advanced notice the next time you make that -- I'll be right over.
